Pumpkin Spice Smoothie

Fall is in full swing, one of my favorite times of year.  While it is a little sad to pack away my flip-flops, I am excited to pull out my boots and scarves.  I also love the flavors of fall – my Farmers Market is bursting with tomatoes, peppers, and winter squash.

Pumpkins are an uber-popular kind of squash;  enjoy it in everything from your latte to lasagna!

You can substitute pumpkin in some of your favorite recipes… Use roasted pumpkin in place of meat in chilli.  Swap canned pumpkin for tomato sauce with your favorite pasta dishes.  I like to use it in place of fruit in my morning smoothie.

Pumpkin Spice Smoothie @CoachReni

Here is one of my favorite fall pumpkin recipes – I hope you try it and like it as much as I do!


Pumpkin Spice Smoothie – 1 Serving

Ingredients:

  • 2 tbsp. canned pumpkin
  • 1 cup unsweetened almond milk
  • 1 banana – Slice and freeze the banana the night before to give your smoothie a thicker texture
  • 1/2 cup Greek yogurt
  • 2 tsp. cinnamon
  • 1 tsp. nutmeg
  • 1-2 tsp. sunflower seeds
  • 1 cup ice cubes

Directions:

  1. Place all ingredients in blender and blend until smooth
  2. Top with an extra shake of cinnamon and a sprinkle of sunflower seeds

Not only is pumpkin a tasty fall flavor, it also has many nutritional benefits, including anti-oxidant vitamins A, C and E.  It is also a great source of fiber, which helps you feel fuller longer so it can help with weight loss.  Similar to other orange vegetables like carrots and sweet potato, pumpkins have beta-carotene, which according to the National Cancer Institute may help prevent cancer.
